I generally avoid store bought energy bars, since they’re often full of unhealthy and artificial ingredients. When I discovered Larabars, though, I was thoroughly impressed. Each flavor only has a handful of ingredients, and they’re all gluten free! The one drawback is that they can get expensive, so I decided to try my hand at a homemade version. This cranberry walnut variety is simple (only three ingredients!) healthy, and satisfying, and the recipe could easily be modified to include different combinations of fruits and nuts.
Gluten Free Cranberry Walnut Energy Bars [inspired by The Kitchn]
Ingredients:
- 1 cup Medjool dates, pitted
- 1 cup walnuts
- 1 cup dried cranberries
Directions:
Combine dates, walnuts, and cranberries in a food processor. Process continuously until all ingredients have broken down and formed a ball.
Press mixture flat on a piece of wax paper. Wrap and chill for one hour.
Slice chilled dough into individual bars. Wrap each bar in wax paper.
Store in the refrigerator for several weeks or in the freezer up to three months.
